Domaine Ellevin practices sustainable viticulture listening to the vines and finding the “terroir” expression.
The wines are characterized as refreshingly vivid with a nice dry mineral side. They present a lovely velvety texture. Their wines are very highly recognized by Guide Hachette, Wine Spectator, Wine Advocate and Wine Enthusiast.
A lovely pale yellow with hints of white gold Chablis wine balanced and in harmony with a beautifully floral, discrete and fresh nose. It is light and delicate wine with a smooth mineral palate of subtle green apples, vivid citrus, firm acidity and a lively fruity finish. It is a great buy. The optimum serving temperature is 12°C. It goes well with fish, shellfish and poultry.
The vineyards are located on Kimmeridgian clay and have a yield of 60 hl per hectare. The whole winemaking process takes place in stainless steel tanks. The alcoholic fermentation is obtained through selected yeasts. The wine undergoes malolactic fermentation and is then cellared for 8 to 12 months.
